The land of Israel was important not only for spiritual reasons, but also for practical reasons.  Israel was an agricultural society and life revolved around the harvest.  There was a season for planting and a season for harvest, for sowing and reaping.

There was three harvest seasons: spring, summer and fall.  So there were three “firstfruits” harvest festivals.  But the Bible only refers to the second holiday (Shavuot) as “firstfruits.”

Deuteronomy 16:16

 “Three times a year all your males shall appear before the Lord your God in the place which He chooses: at the Feast of Unleavened Bread, at the Feast of Weeks, and at the Feast of Tabernacles; and they shall not appear before the Lord empty-handed.

Notice that all of the feasts of the Lord take place in those seasons. The winter holidays (Purim and Hanukkah) were created by the people to commemorate certain victories over the enemy.

The first spring harvest commemorates when Israel first entered into the land and the people reaped where they had not sown.  This second harvest commemorates their first harvest that they had both sown and reaped.
